End Grain Cutting Boards

End Grain Cutting Boards are considered a higher quality then the edge grain or long grain cutting boards. Since you are cutting into the cutting board in the same direction the fibers of the wood grow, the knife slides between the fibers instead of through the fibers. End grain cutting boards are considerably easier on your knifes then edge or long grain cutting boards.
